Vinification and ageing
Rosé : The different grape varieties are harvested separately, with the aim of achieving optimum ripeness for each. Following early-morning harvests when the outside temperature is still cool, this rosé is made by bleeding. The bunches are macerated whole in a tank, and the juice is extracted after a short maceration, when the color has reached the desired level. Alcoholic fermentation takes place in the liquid phase, under temperature control, to develop maximum aromas. No malolactic fermentation takes place, and the wine is quickly bottled to retain its freshness and natural acidity. Red: The different grape varieties are harvested separately to reach optimum ripeness for each, with Syrah generally being the earliest. The vinification process is designed to respect the specific characteristics of each grape variety and the terroir's potential. The different grape varieties are 100% destemmed, with maceration periods of around 3 weeks. Extraction work (pumping over, delestage, punching down) is carefully adapted to each vat to ensure good extraction of varietal aromas and a silky, dense structure.
Tasting notes
Rosé : Tender, pale, brilliant rosé with bluish highlights in its youth, evolving over time to more salmon hues. The nose offers aromas of red berries, blackcurrants and strawberries. Floral notes of roses and citrus round out the palette. The hallmark of this rosé is its notes of spices and violets. The palate is fresh, greedy and endowed with great aromatic persistence and balance. Red: Ruby-purple in color, the nose reveals deep aromas of red and black fruits, notably blackcurrant and strawberry, underlined by spices and hints of garrigue. Silky, fine tannins on the palate. Or & Azur rouge has a spicy, fleshy character, great fruity freshness and a spicy mineral structure.
