The harvest date is only set, variety by variety when the grapes have reached optimum ripeness, and after daily daily berry tasting. Hand-picked grapes are pneumatically pressed as soon as they arrive at the winery. After a light static static settling, part of the juice undergoes alcoholic fermentation in alcoholic fermentation in new barrels (70%), with the remainder vinified in stainless steel tanks (30%).
