Chardonnay Pinot Noir
The name of the estate pays tribute to the many eagles that fly over the vineyard. Located near Limoux, in the Upper Aude Valley, the vineyard is among the highest in the Languedoc Roussillon (500m). The proximity of the snow-covered peaks of the Pyrenees brings climatic influences from the mountains at night that temper the sunshine and the Mediterranean heat of the day. The estate is cultivated in biodynamic agriculture certified Demeter since the 2018 vintage.

    Custody and service advice

Red: Decant and serve at 16°C with a rack of lamb, game or ripened cheese.

    Vinification

White: The grapes, harvested by hand, are pressed pneumatically with the presses separated as soon as they arrive at the cellar. All the juice is fermented in new French oak barrels (temperature control helps to preserve the freshness and integrity of the aromas). The ageing in barrels lasts between 7 and 8 months until the spring equinox with regular stirring.

Red: The remarkable quality of this cuvée lies in the exceptional quality of the old Carignan and Syrah vines. Harvesting is manual and begins when the grapes have reached maturity. Some of the Syrah and Carignan are vinified in whole bunches maceration. Traditional maceration is carried out on the other grape varieties. The wines are blended after malolactic fermentation and then put into 225-litre Bordeaux barrels in our cellar for 12 months of maturation. The wine is then kept for 12 months before being marketed.
