Offers power, volume, density and a solid structure, with lots of freshness, elegance and already silky tannins. A fleshy, racy wine.
Custody and service advice
Ideal at 18oC with roasted peppers, caramel pork or rabbit with prune and matured cheeses.
Work begins at the vineyard with a selection of the plots most suitable to produce this type of wine.
The grapes are harvested largely manually. A double sorting system is carried out in the vineyard and in the cellar.
The winemaking is traditional and the grapes are therefore peeled before the maceration phase begins, which lasts between 3 and 4 weeks. A pressing is carried out, giving way to malolactic fermentation. One third of the wine is aged 9 months in barrels, the rest being kept in vats.
