    Dominated by aromas of very intense berries (raspberry, redcurrant) with a few toasted notes

    Tender, fruity and finely spicy. Fine and silky tannins, exceptional structure. Long and fruity finish

    To be enjoyed ideally at 12-14°C with grilled red meats, roasted poultry, grilled or sauced fish and ripened cheeses


    Vinification

    The grapes are harvested by hand and transported in crates to the cellar. The berries are destemmed and sorted in order to eliminate all the plant parts of the bunch. A cold pre-fermentation maceration of 5 to 8 days is carried out with regular punching down. At the beginning of alcoholic fermentation, punching down is carried out, then, little by little, in order to better control the extraction of aromas and tannins, they are replaced by pumping over. The pressing is delicate in a pneumatic press. Malolactic fermentation and maturing for 9 to 12 months take place in French oak barrels. Finally, the wines from the different barrels are blended after racking.
