Limoux is the land of origin of sparkling wines: in 1531 the monks of Saint-Hilaire discovered the first wine with bubbles. Situated in the foothills of the Pyrenees, this vineyard benefits from the freshness necessary for the production of quality sparkling wines. This exceptional quality even crossed the Atlantic and found an echo all the way to the White House. Indeed, Thomas Jefferson, was a great admirer of the wines of Limoux and discreetly cultivated this love for France as well as for the sparkling wines of Limoux. Indeed, the Crémant de Limoux was the only sparkling wine found in his personal cellar.

Custody and service advice

To be enjoyed at 10°C as an aperitif, with delicately smoked fish, sweet and sour or spicy dishes, or with red fruit desserts.

Vinification

Harvesting is done when the acid-sugar ratio of the grape berry is optimal. The harvest is immediately pressed in a pneumatic press when it arrives in the cellar. The Pinot Noir is not left to macerate so as not to extract too much colour. Alcoholic fermentation takes place in vats, in the same way as the fermentation of a still wine. Then the foaming is carried out according to the traditional method. Finally, the wine is disgorged and the traditional liqueur d'expédition is added.
