    Vinification

Harvesting is manual and the different grape varieties are harvested separately. The grapes are cooled to 8°C and immediately pressed delicately in order to extract the best juices. Fermentation is carried out at controlled temperatures and lasts about 2 weeks. At mid-fermentation, part of the must is put into new French oak barrels for 6 months. The wine is then aged on fine lees with regular stirring of the lees.
