Best served at 12-14°C with grilled red meat, roasted poultry, grilled fish or fish in sauce and mature cheeses
The grapes are harvested by hand in boxes and vatted, after de-stemming, by gravity. Vatting (fermentation and maceration) during 20 days in open vats with punching down twice a day at the beginning of the vatting. After pressing and separation of the presses, the juice is put into new French oak barrels for 10 to 12 months. The wine is racked from the barrels and kept in vats for 1 month to obtain a natural clarification. It is bottled without filtration.
