Bright and shiny yellow
On the nose, the still present toast carries higher a fruit of lime, lemongrass and anise.
The palate reveals treasures of candied pineapple, ginger and roasted almonds, with a complex finish of white pepper, laurel, frangipane and a beautiful saline flight.

The vines are carefully tended, with frequent manual interventions (pruning, debudding, leaf removal, thinning, manual sorting of the grapes), according to environmentally friendly practices. The vineyard is established on espalier, to generate an optimal foliage surface for the maturation of the grapes. The vines are planted at a relatively high density of 5,000 to 6,000 vines/ha, which allows for optimal control of vigor. The care given to the vineyard aims at obtaining a healthy harvest with a moderate yield, allowing to draw the quintessence of the qualitative potential of the grapes. The date of harvest is triggered only when the grapes have reached their optimal maturity. The grapes are harvested by hand and are pneumatically pressed at low pressure as a whole crop as soon as they arrive at the winery. After a light static cold settling, the musts start their alcoholic fermentation in vats and are quickly racked to new barrels at mid-fermentation. Malolactic fermentation is carried out according to the characteristics of the vintage. The wine is aged in barrels for 7 to 8 months (until the spring equinox) with regular stirring of the lees. After a light fining, the wine is bottled unfiltered. The wine is aged in the bottle for several months before being marketed.
