Vinification et élevage
Héritage Grès de Montpellier: The grapes are harvested at full maturity based on berry tastings at the plot. The grapes are sorted a first time in the vineyard then in the cellar. The vinification is traditional with a vatting time of 3 to 4 weeks, followed by a short post-fermentation maceration in order to extract a little more of the color, aromas and tannins. 80% of the wine is aged in French oak barrels for a period of approximately 12 months. Tautavel Heritage: The work begins in the vineyard with a selection of the plots most suited to producing this type of wine. The grapes are harvested largely manually. A double sorting system is carried out in the vineyard and in the cellar. The vinification is traditional and the grapes are therefore destemmed before the maceration phase begins, which lasts between 3 and 4 weeks. A pressing is carried out, then giving way to malolactic fermentation. A third of the wine is aged for 9 months in barrels, the rest being kept in vats. Cité de Carcassonne Heritage: The harvest takes place early in the morning, when the temperature is lowest, in order to preserve the integrity of the aromas. The grapes are transported quickly to the cellar and the juice is immediately extracted by delicate pneumatic pressing. After cold settling, fermentation begins and temperatures are regulated between 14 and 17°C. After fermentation for around 15 days, the wine is racked and aged.

Héritage Grès de Montpellier: The color is deep. The fine and complex nose, deploys aromas of blackcurrant and blackberry enhanced with touches of tapenade, menthol and the whole range of scents of the garrigue. The palate is ample, fleshy with silky and elegant tannins. Héritage Tautavel: The color is deep and bright. The nose reveals a rich palette of black fruits, liquorice, truffle and black olive. The palate offers power, volume, density and a solid structure, with a lot of freshness, elegance and already silky tannins. A fleshy and racy wine. Héritage Cité de Carcassonne: The straw yellow color is bright. On the nose, it reveals an intense bouquet with notes of nectarine, acacia, coconut and hazelnuts. The palate, round and ample, offers beautiful exotic flavors and a long mineral finish.
