Description du vin
Royal Eagle Chardonnay 2020
Domaine de l'Aigle is a 47-hectare property beautifully located in the northernmost part of the Haute Vallée de l'Aude vineyard, between 250 and 500 meters above sea level. We produce wines of great finesse from Chardonnay and Pinot Noir.
The Viala 2020
Le Viala comes from a plot of Château Laville Bertrou, located on an exceptional terroir within the very high-quality Livinière appellation (officially recognized in 1998), synonymous with great Languedoc wines.
This extraordinary terroir, acquired by Gérard Bertrand in 1997, produces powerful and distinctive wines that have won awards. Benefiting from a Mediterranean, semi-arid climate with a temperate winter variation, Viala faces due south on the heights of the village of La Livinière at an altitude of around 120 m. The soil is made up of a mosaic of stripped marl, associated with calcareous sandstones, as well as compact limestone dating from the Eocene (Tertiary era).
This type of terroir naturally limits the production of each vine, and allows, thanks to deep rooting, to resist low rainfall and water stress. The slow ripening of the grapes is thus encouraged thanks to the significant sunshine. The three grape varieties assembled for this vintage express in a complementary and nuanced way this unique terroir that is Viala.
Hospitalitas 2020
Overlooking the Mediterranean by a hundred meters, the Château l'Hospitalet vineyard benefits from exceptional climatic conditions (semi-arid Mediterranean climate, with mild winter variant). The heat and sunshine, mitigated by the altitudinal gradient, offer possibilities for slow maturation from September to October, favorable to the aromatic expression and the finesse of the tannins. The Hospitalitas plot, located in the heart of the vineyard, at the base of a 30-meter cliff that protects it from the north wind, benefits from a microclimate.
The exceptional character of this vintage comes from the fact that the plot is located on the two terroirs that make up our vineyard: the marl-limestone soils of the Gargasian, rich in fossils, which provide the vines with a water supply throughout the summer despite the absence of summer rain; the Mediterranean red soils of the Barremian formed on the compact blue-grey limestone conquered from the scrubland, which allow the production of rich and concentrated wines. The blend of these two grape varieties gives this vintage a beautiful aromatic expression, a tonicity and a remarkable aptitude for aging, fruit and roundness.

Vinification et élevage
Aigle Royal Chardonnay 2020: The vines are carefully tended, with frequent manual interventions (pruning, disbudding, leaf removal, thinning, harvesting by hand sorting), using environmentally friendly practices. The vineyard is established on espaliers, to generate an optimal leaf surface for the ripening of the grapes. The vines are planted at a relatively high density of 5,000 to 6,000 vines/Ha, which allows for optimal control of vigor. The care given to the vineyard aims to obtain a healthy harvest with a moderate yield, allowing the quintessence of the qualitative potential of the grapes to be extracted. The harvest date is only triggered when the grapes have reached their optimal maturity during daily tastings of the berries. The grapes are harvested by hand and are subjected to low-pressure pneumatic pressing in the whole harvest upon receipt at the winery. After a light cold static settling, the musts begin their alcoholic fermentation in vats and are then quickly transferred to new barrels halfway through fermentation. Malolactic fermentation is carried out according to the characteristics of the vintage. Aging in barrels lasts 7 to 8 months (until the spring equinox) with regular stirring. After a light fining, the wine is bottled unfiltered. The wine is aged in bottles for several months before being marketed. Le Viala 2020: The harvest is triggered after very precise monitoring of ripeness and daily tasting of the berries. The harvest is manual and the grapes are meticulously sorted as soon as they enter the cellar. The Carignan and part of the Syrah are vinified in whole bunches. The Grenache is destemmed and vinified in traditional maceration. After the malolactic fermentation of the wines, the different grape varieties are blended and the wine is placed in French oak barrels for 12 months of aging. We select the best coopers, in order to adapt the choice of wood origins and type of toasting, to each vintage. The wines are neither fined nor filtered before bottling. The bottles are then kept for 12 months before being marketed. L'Hospitalitas 2020: The grapes are hand-picked and meticulously sorted upon arrival at the winery. The Syrah is partly vatted in whole bunches and then vinified in whole bunch maceration. The other part of the Syrah as well as the Mourvèdre are destemmed and then vinified in traditional maceration for 15 days to 3 weeks. After draining the vats and malolactic fermentation, the wines are transferred to new barrels for aging for approximately 12 months.
