Terroir

The southern slopes of the hillsides reserved for the appellation have a combination of light and stony clay-limestone soils.

Climate

The natural protections, which surround the appellation area on three sides, limit maritime influences and give it a climate between the ocean and the Mediterranean.

Grape varieties

Crémant de Limoux: Chardonnay (30% min) Chenin (10% min), Chardonnay + Chenin (90% max). Accessory grape varieties: Mauzac + Pinot Noir (40% max), Mauzac (20% max)
Limoux white (still wine): Mauzac, Chardonnay, Chenin.
