Vinification et élevage
The harvest date is only triggered, grape variety by grape variety, when the grapes are at optimum maturity and after daily tasting berries. The grapes are harvested by hand and are pressed pneumatic with separation of the presses upon arrival at the cellar. After a light static settling, the juice (100% of it) undergoes a alcoholic fermentation in barrels (Temperature control) helps preserve the freshness and integrity of the aromas). Breeding in barrel lasts between 7 and 8 months until the spring equinox with regular stirring (for two months). After a light fining, the wine is bottled.

Golden, shiny dress, a fairly deep yellow. Very expressive nose with sublime depth, aromas of dried apricot, toasted almond, perfume very floral with hawthorn and broom. Full and creamy mouth, round, very velvety and brioche-like. Tense finish and a great freshness.
