Vinification et élevage
The winemaking is precise and very precise considering that we We do not use sulphur or oenological inputs at any time during the winemaking or bottling. Upon receipt, the grapes are immediately cooled to 8°C and pressed, taking care to separate the press juice. The juices are cold clarified in order to promote a natural clarification of musts and elimination of compounds oxidizable by precipitation. Alcoholic fermentation is rapidly initiated at temperatures of fermentation regulated between 17 and 18°C. At the end of fermentation, the wine is drawn off in such a way as to keep some fine lees which will be the base antioxidant of wines during their aging before bottling.
