This exceptional rosé was born on this particular terroir where the schists rest on limestones bringing both power and minerality to this wine. The harvest is done entirely by hand in 10 kg crates which will spend a night in a cold room to be pressed the next day and thus preserve the aromatic purity of the grapes. This latest vintage, despite its youth, reveals a remarkable complexity and will be a reference for the coming decades. It is characterized by notes of red fruits where notes of blackcurrant, exotic fruits, pineapple are also mixed but also by a sensational minerality and freshness. The length and the aromatic of the nose continue in the mouth with a silky, complete wine, bouncing on the palate.

Vinification et élevage
Manual harvesting in crates is done at daybreak in order to benefit of the night thermal lowering. Each plot is harvested at optimal date and vinified separately. The cellar being located in the heart from the vineyard, the transport time is minimal. The best juices from flows are then selected. Before low fermentation temperature, a 24-hour settling at a controlled temperature between 8 and 10°C is achieved without the addition of sulphur. The aging is done in new barrels selected with precision according to the origin of the wood, for 6 months on fine lees with stirring. The wines are assembled on a fruit day.

Clos du Temple is a very pale and sparkling rosé. Its nose reveals notes of ripe fruits (apricot, white peach), floral notes of rose and spicy aromas of green pepper. On the palate, we find the same scents, enhanced by a delicate finish of blond tobacco. This wine is capable of aging for many years.
