The work begins in the vineyard with a precise and meticulous selection of plots most suitable for producing this type of wine: 90% of the final result comes from of this precision work. The health condition must be perfect, the foliage must be healthy, fresh and dense, the grapes must have an optimal level of maturity. Indeed, the period for collection is very short as the acid/sugar balance and the Maturity of tannins is essential for this category of wine. The winemaking is very traditional, except that we do not use SO2 or other oenological input. The grapes are destemmed then the maceration phase lasts about 10 days during which we only work the extraction with daily pumping over to promote the expression of the fruit. Pressing intervenes, taking care to separate the presses. The wines are then drawn off in the aim of removing the coarsest lees before malolactic fermentation. Following this, the wines are drawn off again and then put in the cold to guarantee their good stability in the tank.

The color of this wine is a very red deep. This Syrah offers notes of ripe fruit delicately liquorice. A round and generous wine.
