Vinification et élevage
The vineyard is densely planted, with around 5,000 to 6,000 vines. of vines per hectare, which allows us to control the vines and to produce wines of exceptional quality. The vines are trained in espaliers to ensure optimal exposure to the sun, which allows the grapes to ripen perfectly. The vines require regular care and manual maintenance. Pruning, disbudding and leaf stripping are carried out according to a specification environmentally friendly charges. Chardonnay grapes are harvested by hand, once they have reached maturity maximum, and transported to the cellar in special bins. The juice is immediately extracted by delicate pneumatic pressing, thus ensuring the superior quality of the must. The must is cooled and left to settle before the start of alcoholic fermentation. The wine is left to mature on fine lees and a certain proportion is transferred to oak barrels for fermentation complete malolactic.
Note de dégustation
A golden green dress with silvery gray highlights. Nose expressive with fruity notes of white peach, opening with notes of almond paste and pastry. The palate is fresh, mineral, light and supple with a menthol finish.
