Wine & Food Pairing: Domaine de l’Aigle Pinot Noir & Rabbit
Domaine de l'Aigle , located near the village of Roquetaillade, near Limoux at the foot of the Pyrenees, is a 31-hectare property between 250 and 500 meters above sea level, thus representing one of the highest vineyards in the Haute Vallée de l'Aude and in the whole of Languedoc.
The vines planted with Pinot Noir find climatic conditions close to their original Burgundy with an oceanic and semi-continental climate with regular rainfall.
Domaine de l'Aigle Pinot Noir reveals aromas of small berries (raspberry, redcurrant). Soft, fruity and finely spicy, it reveals fine and silky tannins as well as an exceptional structure in the mouth. The finish is long and fruity.
It is an ideal wine to accompany your grilled meats, especially rabbit.
