Easter Food and Wine Pairing - Lamb and Cigalus
This Easter weekend, we recommend these Easter recipes to prepare Cathar lamb which will pair very well with our 2017 Cigalus Rouge vintage. Its aromas of candied fruit will enhance the taste of vegetables and its dynamic taste will coat the meat in a warm embrace.

The carbonic maceration vinification method on Syrah and Carignan allows an aromatic explosion but above all a delicacy of the tannins. These notes are found on the nose in the form of jammy black fruits, liquorice, spices but also truffle.
It is best to let the wine air for a while or to decant it to allow for a nice aeration and optimum tasting of this vintage.
