Ideal at 18°C with lamb, game or refined cheeses.
Harvesting takes place when the grapes are at optimum maturity. The grapes are de-stemmed as soon as they arrive in the cellar and are then vinified in the traditional way. Daily pumping over allows a delicate extraction. Vatting lasts about twenty days with a precise control of temperatures. After pressing, the wine stays in vats for malolactic fermentation before being aged in barrels.
