Custody and service advice
Serve at 10-12°C - To be enjoyed as a cocktail and can accompany as well, finger food, marinated fish or exotic dishes.
The grapes are harvested early at the end of August because of their proximity to the Hérault coast. Harvesting is carried out at night or very early in the morning in order to preserve all the freshness and integrity of the berries. As soon as they arrive at the winery, the grapes are immediately and delicately pressed in order to favour a very light colour. The first juices are run off and the presses are spread out to keep only the heart of the cuvée. The musts after pressing are settled statically in the cold for 48 to 72 hours to obtain a very limpid must and favour mineral expression. Alcoholic fermentation is carried out at temperatures of 15 and 18°C to favour the expression and freshness of the aromas. The wine is matured on its fine lees in stainless steel tanks for several weeks before bottling.
