The vineyard, at the foot of this medieval fortress, is located between the Pyrenean mountains in the south and the Montagne Noire in the north.
It benefits from a Mediterranean climate tempered by the altitude and the oceanic influences of the Atlantic.
It is a wine with no added sulphite.
Golden yellow, bright and clear
Perception of floral (white flowers), spicy and toasted notes
A beautiful maturity and a sustained acidity
give this wine a very balanced structure.
The mineral and lingering finish reveals the character of the
oceanic of this wine.
Custody and service advice
Serve at 10 °C - Enjoy as an aperitif, with salads or exotic dishes.
The grapes are harvested before daybreak, when the temperatures are at their coolest, and transported quickly to the winery. Pressing is done under neutral gas protection and only the highest quality juices are selected. Alcoholic fermentation takes place at a regulated temperature between 16 and 18°C. After fermentation has started, half of the cuvée is put into barrels.
new French oak. At the end of the fermentation, the wine is racked while keeping some fine lees and regular batonnages will bring roundness. Before bottling, the bases vinified in vats and those in barrels are blended and the wine is clarified by a light fining.
