    Nose

    The nose has aromas of pepper, chocolate, mint, sandalwood and sandalwood.


    Mouth

    The attack is bewitching and the palate fascinates with its aromas of juniper berries, black fruits, all enhanced by mellow and subtle tannins.

    Custody and service advice

    To be decanted for 1 hour, ideally served at 17° with matured Aubrac beef meat cut in the fillet or rib.


    Vinification

    The vines are cultivated in Biodynamic way and are entirely worked with mullets and horses. Leaf thinning is carried out before the harvest is entirely manual. All macerations are carried out in the concrete and thermoregulated vat room, distinguishing between each plot and each grape variety. Syrah: vatting and vinification in destemmed grapes. Grenache and Mourvèdre: destemming and light crushing in the vatting room. Controlled vatting temperatures. Very gentle maceration limiting tannic extraction. Just a few ventilation and humidification pumping over of the hat. Carignan: vatting in whole bunches, vinification at a fairly high temperature favouring aromatic extraction.
