The vineyard, at the foot of this medieval fortress, is located between the Pyrenean Mountains in the south and the Black Mountain in the north.
It benefits from a Mediterranean climate tempered by the altitude and oceanic influences of the Atlantic.
This is a wine without added sulphite.
Pale pink with slight orange highlights
This structured wine is straight. It will take on notes of dried fruit and pastry after a year in the bottle.
Fresh and full. Endowed with a beautiful acidity it will evolve towards red fruits, of type, blackcurrant and strawberry, and notes of confectionery.

Making a sulphite-free wine requires a great deal of technical skill and special attention during the winemaking process. The grapes are harvested before dawn, when temperatures are at their coolest, and transported quickly to the winery. Pressing is done quickly and only the best quality juices are selected. Cold settling allows clarification of the must and precipitation of oxidizable compounds. Alcoholic fermentation takes place at a regulated temperature between 15 and 17°C. At the end of the fermentation, the wine is racked while keeping some fine lees which will be the anti-oxidizing base of the wines during their ageing. The wine is bottled quickly in order to preserve its aromatic freshness.
