The vineyard, at the foot of this medieval fortress, is located between the Pyrenean Mountains in the south and the Black Mountain in the north.
It benefits from a Mediterranean climate tempered by the altitude and oceanic influences of the Atlantic.
This is a wine without added sulphites.
Pale yellow with slight green highlights
Very fresh, great aromatic complexity ranging from citrus fruit notes, like grapefruit, to exotic fruits with pineapple.
Refreshing and taut with notes of pastry and a beautiful floral bouquet.

Serve at 10-12°C - It will perfectly accompany grilled fish, white meat, or can be enjoyed as an aperitif.
Making a sulphite-free wine requires a great deal of technical skill and special attention during the winemaking process. The grapes are harvested before daybreak, when temperatures are at their coolest, and transported quickly to the winery. Pressing is done quickly and only the best quality juices are selected. Cold settling allows the must to be clarified and the oxidizable compounds to precipitate. Alcoholic fermentation takes place at a regulated temperature between 16 and 18°C. At the end of the fermentation, the wine is racked while keeping some fine lees which will be the anti-oxidant base of the wines during their maturing. The wine is bottled quickly in order to preserve its aromatic freshness.
